Potato Salad plus raisins, persimmons, apples

Have you ever had potato salad with persimmons?  My mother used to make it that way in fall, in the searon for persimmons.  I also liked when she threw some raisins in it, too.  In winter, she'd make it with fresh apples.  She'd cut up apples in small pieces with skin on.  And raisins.  Aaaahh.
